"Use count" for MAPI & EWS is tough as it's a server protocol like IMAP or POP. Therefore, your MAPI & EWS counts would essentially match the total users on the server. You could also look at User Connections to see a count of the MAPI & EWS connections. That may be a more accurate way of seeing "in use" connections. EAS, as it's a per mailbox license, is different and you can get that from the Licensing page on the EAS card.
