You have a few options, depending on how you are using SmarterMail.
1. Archiving. If you have archiving enabled, you should be able to restore, say, all emails sent TO that user, and FROM that user. They will have to do some re-organization, but it should be possible.
2. Restore from a backup. If you're backing up the server, you should be able to restore this user. Even if the backup is a few days old, something is better than nothing.
3. I'm assuming you checked their Deleted Items folder? If you deleted them from webmail they may still be there as long as they weren't purged.
