IMAP Move to new Outlook.com server, after DNS already changed

HI All.
So, One of our clients went and created a new account with Microsoft, and then changed the DNS for the original mail.domain.org to their new domain.mail.protection.outlook.com server, before moving any data.
Now they want to be able to pull all of the email from our server, over to their new outlook accounts, and use IMAP to do it, so it replicates all of their mailbox structure into their new server.

I think this would have been easier if they had not changed the DNS first.  So, what are some suggestions ?  If i give them the server IP address instead of the original mail.domain.org can they grab all of their old email through IMAP ?  Or can i give them another domain on the server, like ours. mail.HawaiianHope.org and can they use that as the server address with IMAP, but still their normal full credentials ?

Finally, This is for SmarterMail 14.xxxx something.  Is there going to be any problems with their new outlook or outlook.com connecting to IMAP on our server ?

You should be able to log on to any mailbox via any domain or IP that points to your SM installation.

We do this for migrations when the DNS has already been updated.

In addition, we run one main domain (with SSL) that all out clients connect via.
