What's the best way to migrate a mail host?

I've reviewed the documentation that explains what files need to be moved for server migration, but I'm moving to a cloud host and need to transfer 65GB of mail data with as little downtime as possible. I can't afford to have the server down for a day to do the xfer and assume I will need to selectively move folders and then move the older content afterwards.
 
Does anyone have pointers on doing such a move?

Very disappointing to get no response. I followed the instructions for upgrading servers by moving prefs. So that no mail was lost, I started up the new server. I then archived each mail folder (inside domains) off the old server and moved to the new server. As each domain was copied to the new server, I then merged the extracted files to the new mail folder. Very slow and tedious moving so much mail.

There was a lot of information on the old forum related to this topic.  SmarterTools promised to keep it available for searching, then they used some bogus justification to remove all of it -- without asking for any input from the community.  It's a shame, and tells you something about their evolving mindset.  Many of us here were former Imail users who got tired of the deaf ears.  I hate to see it happening again.

There certainly was vast resources available for this exact topic. I'm guessing many of the old forum content authors are bitter that their previous efforts were so thoughtlessly disregarded by Smartertools.
