How to send user follow-up date in email alert?

We use the schedule follow-up feature to schedule when some tickets will begin work. We'd like to alert the submitting user this date so that they know when IT will be ready to work and discuss their issue. I seem to only be able to send the the minutes until this follow-up date... is there a way to just send the calendar date?
