Moving account from one mail server to another

Does anyone know if there is an easy way of moving mail accounts from one server to another slowly (not all at the same time).

Is there a way mail can still go to the original mail server, and forward mail for accounts that have been moved already to the new server?

The other mail server is icewarp moving to Smartermail.
