New Window Updates haven't been installed yet (I believe they were released yesterday on "patch Tuesday").

I'm installing these updates now and will continue to monitor performance.

In the meantime, are there any other logs or settings I should be checking?

Yes we are seeing this too when MAPI is running, though it was a few days ago when I was testing MAPI, I havent seen it since I changed my folder structure for my email account.

How did you change your folder structure? Move any folders nested under the Inbox to the root level?

If so, we just did this for another client and all the folders lost their contents!

IIS crashes have stopped since I closed my Outlook running MAPI (I am currently the only MAPI user). So it is something related to MAPI.

Are there any errors or exceptions being reported in the MAPI logs?

I only have the following errors in the logs.

We've had to roll-back to a production release of SM as things went bad, very bad with the beta.

Since closing my Outlook, the worker process for IIS hasnt crashed at all. So it must be related to MAPI.
