External Gateway

I have an external gateway for every domain we have. Recently we have been getting a report back that the mail has issues due to the IP Address of our mail server. Our mail server is on Amazon EWS and why we use an external gateway. If every domain is set to use the external gateway why is our IP address even showing up and how can we make it so that every email that leaves the system (e.g. a default) uses the external gateway?
