iPhone Sent Messages Disappearing

I have a client using an iPhone 8, Apple Mail, and setup using POP3. Over the past weekend, all of the email she sent out via her phone just vanished. It’s not in her sent folder on the phone, and our logs show no evidence of the outgoing messages. At the moment I am not positive if these all were sent over AT&T’s cell network or her home WiFi, but it’s as if they never existed. As of yesterday, everything was working properly again.

Since I can not find those outgoing messages in our logs, I’m at a loss to help her understand what happened. Has anyone experienced this issue or have any suggestions for troubleshooting? Thank you.
