UID change and re-sync in SM14

We upgraded one of our SmarterMail server this friday from v11 to v14.
 
I've read numerous threads about the UID change and IMAP re-sync but some points are still unclear to me :
 
- I understand you can change the speed of the process with the maxUidVvFixesPerHour flag
but this process only change UID on the server right ? If all my users are not connected (we usually make upgrade on friday night), the IMAP resync will happen on monday morning when they all get to work and start their outlook ?
(that means all at the same time, with a risk for the bandwith to collapse, as several have mailboxes over 20 GB)
 
- What are the mail client affected ? (forced to resync) From the first feedback I had this morning, it seems Apple Mail client didn't resync ? Is it only Outlook ? All versions ?
 
- Is there a way to slow down/stop the update process of UID under 1 per hour ? Can you set it to 0, wait one day or two, and put it back to one ?
 
We have two other SmarterMail servers, one with 4 domains, 237 accounts and 659 GB of mailboxes and one with 161 domains, 1770 accounts and 846 GB of mailboxes, this "upgrdade" is a nightmare for us...
