I need to print all of the emails sent to and from our server from a specific person. We are in a court case and I want to make sure we get all of them from all employees. Is there an easy way to do this without going to each email and printing it. There will be 100s of emails with this company.

If you have an e-mail enabled, networkable printer, create a mailbox for the printer, forward copies of all the messages to the printer's mailbox, and have the printer poll the mailbox.
 
Note that your printer will have to support SMTP authentication, usernames, and passwords to do this.  Most high-end, all-in-one, printer, copier, fax units are capable of doing this
 
This will automatically  print everything for you.
